New Tablet, few questions

Just got a new Tablet, Lenovo Yoga Tab 3 Plus.... Replacing my old Nexus 10. Great Tablet, but starting to show its age.

Had 2 questions. Updated to Android 7, and first off, installing my apps. I got rid of widgets and the Google bar, and bottom of the screen shows only one dot, so one page. I install apps and icon goes to a new second page. I shift everything over to the new page, old empty page disappears. I install another app and a new second page is created where the icon goes.......
