Can't edit the number of a contact, only the name

Hi

I have True Phone installed and granted all permissions - Android 7.
I deinstalled or deactivated (Google) Phone, Contacts and some other apps. I also reduced permissions of many apps. I want to avoid contacts to be handed out to Google.

What permissions in what apps do I need to be able to edit my contacts number?

Saving new contacts is working fine.
